Lemon Syrup Cake Veg CD CBF 75mins plus soaking Makes 1 x 20cm/8 inch cake Cold Vegetarian Fruit Cakes Baked Fayre
Ingredients For the Cake 3 Eggs 175g/6oz Butter 175g/6oz Caster Sugar 175g/6oz Self Raising Flour Grated rind and juice of 1 Lemon For the Syrup 175g/6oz Caster Sugar Juice of 3 Lemons 4 tbsp Water
Instructions 1. Preheat the oven to 180 C, 350 F, Gas mark 4 and grease and line the base of a deep 20cm/8 inch cake tin. 2. Put all the cake ingredients in a large bowl and beat until light and fluffy. Pour the mixture into the prepared tin and bake for 1 hour until golden and firm to the touch. 3. Meanwhile place the syrup ingredients in a pan and heat until the sugar dissolves. Bring to boil and boil for 2 minutes. 4. To serve - when the cake is cooked, pour over the hot syrup and leave to soak for ½ hour.
