Madeira Cake Recipe    Veg   CD  CBF  120mins

 

Makes one 15cm/6 inch cake    Cold   Vegetarian   Cakes  Baked Fayre   

 

Ingredients:

200g/7oz Plain Flour

1 level teasp Baking Powder

The grated Rind of 1 Lemon

150g/5oz Butter

150g/5oz Caster Sugar

3 Eggs, beaten

Citron peel, optional

 

Instructions

 

1. Preheat the oven to 180C, 350F, Gas mark 4. Grease a 15cm/6 inch cake tin and line with greaseproof paper, then grease the paper. Sift the flour and baking powder on to a plate.

 

2. In a mixing bowl, cream together the fat and sugar with a wooden spoon until the mixture is pale and fluffy. Add the grated lemon rind and mix well.

 

3. Add the egg a little at a time, beating well between each addition.

 

4. Fold in half the flour, using a metal spoon, until well mixed in, then fold in the remaining flour. Turn the mixture into the prepared cake tin and level the top. Place near the bottom of the oven, cover the top of the cake with a piece of greaseproof paper and bake for about 1-1/2 hours, or until well risen and golden.

 

Traditionally, this cake is decorated with 2 strips of candied citron peel, which are stuck into the top of the cake after it has been cooking for about 30 minutes.
