Royal Icing Recipe

This icing recipe is suitable for icing rich fruit cakes such as Christmas cake or wedding cakes once they have been covered with almond paste (marzipan).

Yield:

Ices 1 x 20cm/8 inch cake

Ingredients

675g/1-˝lb Icing Sugar
3 Egg Whites
2 teasp Glycerine
2 teasp Lemon Juice

Instructions

 

1. In a large mixing bowl, whisk the egg whites lightly with a fork until frothy.
 
2. Sift in the icing sugar a little at a time, whisking well until  the icing reaches soft peaks.

3. Add the glycerine if and the lemon juice and mix well.
 
Cover with a damp cloth or clingfilm for a short time until ready to use.
