Rum Butter Biscuits Veg CD CBF 25minsMakes 15 Biscuits Cold Vegetarian Alcohol Cookies Baked FayreIngredients: 100g/4oz Plain Flour 100g/4oz Butter 3 Egg Yolks 2 teasp Dark Rum 1/4 teasp Salt Instructions 1. Place the flour and butter in a large mixing bowl then using a knife, cut the butter into the flour until the granules are the size of peas. 2. In another bowl, mix together the rum, salt and two of the egg yolks. Add to the flour mixture and mix well. 3. Knead lightly, then chill for at least 15 minutes. 4. Preheat the oven to 180C, 350F, Gas mark 4 and lightly grease 2-3 baking trays. Turn the dough onto a floured surface and roll out to 5mm/1/4 thickness. Cut into 5cm/2inch rounds using a pastry cutter and transfer to the trays, spacing well apart. 5. Lightly beat the remaining egg yolk and use to glaze each biscuit. Bake in the oven for 10 minutes until golden. Remove and cool on a wire tray.
