Pork with Bamboo Shoot

200g/7oz Pork Fillet
2 teasp Cornflour
˝ teasp Salt
3 tbsp Vegetable Oil
2 Spring Onions, chopped into 2.5cm/1 inch
100g/4oz tinned Bamboo Shoots, thinly sliced
1 ˝tbsp Soy Sauce
1 tbsp Dry Sherry
1 teasp Sugar
2 tbsp Stock or Water
1 teasp Sesame Oil
Slice the pork very thinly into bite-sized pieces.
In a large bowl, mix together the cornflour and salt then add the pork slices
and mix well.
Heat 2 tablespoons of the oil in a frying pan or wok until very hot. Add the
stir fry for 2-3 minutes until opaque. Remove with a slotted spoon and set aside.
Add the remaining oil to the pan and heat until very hot then add the bamboo
shoots and stir fry for 2-3 minutes.
Return the pork to the pan together with the sherry, sugar, stock and soy sauce.
stirring constantly, until the sauce thickens.
Add the sesame oil and serve immediately.
