Chimichurri is a very popular sauce in Argentina and is used much in the way Tomato Ketchup would be used in some cuisines. It is an absolute must with the Argentine  grilled/barbecued  meats called asado.

 

The texture can range from a smooth-ish sauce to an almost salsa like affair and many different ingredients can be added according to what's available, but the basics are always olive oil, vinegar or lemon juice, garlic and herbs.

 

Argentines also use this sauce as a marinade for meat, poultry and fish as well as a table condiment which they spoon generously over cooked meats, poultry, fish and vegetables.
