Chilled Soba Noodles Veg CD MC Japanese 20mins
Serves 4 Cold Vegetarian Pasta Vegetables Alcohol Main Course Japan Asia
Ingredients 250g/9oz Dried Soba Noodles 180ml/6fl.oz. Dashi Stock 2 tbsp Japanese Soy Sauce 2 tbsp Mirin ½ teasp Sugar 2 Spring Onions, finely chopped 1 teasp Wasabi ½ sheet Yaki-Nori (toasted seaweed), shredded
Instructions
1. Bring a large saucepan of water to the boil, add the noodles and cook for 7-10 minutes or until just tender. Drain well and rinse under cold water. Set aside.
2. Place the dashi, mirin, soy sauce and sugar in a small saucepan and heat over a low heat, stirring, until the sugar dissolves. Remove from the heat and allow to cool.
3. Just before serving plunge the noodles into iced water to chill. Drain well place on a flat serving platter, sprinkled with the shredded seaweed.
4. Transfer the sauce to individual dishes and use as a dipping sauce for the noodles.
