Go to:-    Spain Main Page   |  Spain Speciality Dish  |  Cooking by Country Main Page

There are two types of Chorizo.

Spanish Chorizo is a seasoned, smoked pork sausage flavored with garlic, chili powder and other spices and is widely used in  Spanish cooking.  It's usually sold whole,  cut lengths or in rounds and being dry-cured, can be just sliced and eaten or added to dishes.

Mexican Chorizo is made with fresh pork and is moist .  It's also highly seasoned but being soft-cured,  it must be cooked  first. The casing should be removed and the sausage crumbled or chopped before cooking. They are often sold in links.

You will find  recipes using this wonderful spicy sausage on both the  Spanish Cooking by Country main page and in other sections of this web site. Use the search facility to find them all, but also do experiment with it, adding it to stews, soups or casseroles.

Happy cooking!
