Kiełbasa is the generic Polish word for sausage. Sausages feature widely in Polish cuisine, and come in many varieties. Most regions have their own speciality which can be smoked or fresh, but almost always contain pork.. Popular types include kabanosy which are flavoured with caraway, krakowska a smoked sausage seasoned with coriander and garlic.
sausage (kiełbasa) and myśliwska which contain juniper berries.

They are not only used as a main ingredient but often as an added ingredient together with other meats.
