450g/1lb Daikon Radish, thinly sliced
150g/+5oz Carrots, thinly sliced
2 tbsp Sugar
1 tbsp Sake
1. Place the
radish and carrots on a large platter, sprinkle with a little salt and leave for
2. Rinse the radish and carrot slices in cold water and drain well.
3. Place the
vinegar, dashi, sugar, and sake in a large saucepan and bring to boil.
4. Add the daikon
and carrot slices to the saucepan and mix well. Cover and leave to cool
completely before serving.
