Kiribath (Kiri Buth) is best translated as milk rice. Although a very simple
Sinhalese recipe, it is also a very traditional one which is served in
throughout all Sinhalese society – be they rich or poor. Celebratory menus
always feature it, it is essential on Sinhalese New Year's day and is
traditionally served for breakfast on the first day of every month.
Whilst most often served as a savoury accompaniment to a main course curry it can also eaten with grated
Jaggery (palm sugar) and fruit such
as bananas.

Ingredients
250g/9oz Long Grain White Rice
420ml/14fl.oz. Water
180ml/6fl.oz. Thick Coconut Milk
½ teasp Salt
Instructions
1. Place the rice in a saucepan with the water, bring to the boil then reduce
the heat and simmer for 15 minutes. Drain any remaining water.
2. Add the coconut milk and salt , mix well then cover the pan and continue to
simmer gently until the liquid is absorbed and the rice is very soft and creamy.
3. Allow to cool a little then transfer to a wide shallow serving dish and
flatten down into a compact shallow oblong shape then cut into diamond or square
shapes.
