Tortilla Campesina Tapas Veg CD HD Spanish 25mins plus cooling
Cuts into 8 Vegetarian Cold Appetiser Hors d'oeuvre starter Tapa Gluten Free Spain
Ingredients 2 tbsp Olive Oil 1/2 Spanish Onion, grated 2 Garlic cloves, crushed 1 Red Capsicum (Sweet Pepper), diced 1 Green Capsicum (Sweet Pepper), diced 1 teasp finely chopped Chives 1 teasp Freshly chopped Basil Salt and Pepper 6 Large Eggs
Instructions
1. Heat half the olive oil in a frying pan, add the onions and garlic and sauté for a few minutes.
2. Add the peppers and cook, stirring, until soft.
3. Add the chives, basil, salt and pepper to taste and mix well.
4. In a large mixing bowl, beat the eggs then add the vegetables and mix well.
5. Heat the remaining oil in the frying pan then add the egg and vegetable mixture. Cook omelette for 2 to 3 minutes then turn and cook for an additional 2 to 3 minutes.
6. Remove the cooked omelet from the pan and set aside until cooled.
7. To serve - cut into wedges and serve at room temperature.
