Cold Appetiser Hors d'oeuvre starter Tapa Gluten Free
tbsp Olive Oil
Spanish Onion, grated
Garlic cloves, crushed
Red Capsicum (Sweet Pepper), diced
Green Capsicum (Sweet Pepper), diced
teasp finely chopped Chives
teasp Freshly chopped Basil
Heat half the olive oil in a frying pan, add the onions and garlic and
sauté for a few minutes.
Add the peppers and cook, stirring, until soft.
Add the chives, basil, salt and pepper to taste and mix well.
In a large mixing bowl, beat the eggs then add the vegetables and mix well.
Heat the remaining oil in the frying pan then add the egg and vegetable mixture.
Cook omelette for 2 to 3 minutes then turn and cook for an additional 2 to 3
Remove the cooked omelet from the pan and set aside until cooled.
To serve - cut into wedges and serve at room temperature.
