Vegetarian Fruit Nuts Herbs Spices Dessert Pudding
3 Small Bananas, peeled and thinly sliced
The Juice of 1 lemon
350g/12oz Greek Yoghurt
2 tbsp Chopped Pistachio Nuts
Fresh mint leaves
1. Place the bananas and lemon juice in a mixing bowl, turn
well to coat then place a few slices into the base of four serving
glasses. Set aside.
2. Place the remaining banana slices in a blender or food processor
together with the yoghurt and process until smooth. Set aside.
3. In another mixing bowl, stir the nuts into the custard.
4. Layer the yoghurt and custard mixtures alternatively over the
bananas in the serving glasses, decorate with a sprig of mint and
