Apple and Cinnamon Kugel  Recipe


Veg HT CD DP Jewish 90mins


Serves 4-6      Hot Cold Vegetarian  Dried Fruit Spices Pasta  Dessert Pudding Jewish

350g/12oz Lochshen (Flat Egg Noodles)
150g/5oz Unsalted Butter
2 Cooking Apples
250g/9oz Cottage Cheese
3 Eggs, beaten
2 teasp Ground Cinnamon
250g/9oz Sugar
100g/4oz Raisins
teasp Baking Soda
A pinch of Salt



1. Preheat the oven to 180C, 350C, gas Mark 4 and lightly grease a deep ovenproof dish (approx 30x20cm/12x8-inches) with some of the butter.

2. Bring a large pan of lightly salted water to the boil, add the noodles and cook for 8 minutes or until just tender. Drain very well in a colander.

3. Melt the remaining butter in the rinsed out saucepan then add the drained noodles and toss to coat evenly.

4. Coarsely grate the apples and add to the noodles together with the remaining ingredients and mix well.

5. Turn into the prepared oven dish and bake for 1 hour until crisp and browned. Serve hot or cold.
