Baked Mango   Veg  CD  DP  Tahitian  50mins plus chilling   


Serves 4   Cold  Vegetarian  Vegan  Dessert  Dairy Gluten Wheat free  Eggless  Tahiti  French Polynesia  Oceania




4 Ripe Mangoes 

600ml/20fl.oz. Red Wine
50g/2oz Castor sugar 

2  Vanilla Beans, halved




1. Preheat the oven to 170C, 325F, Gas Mark 3. Remove skin from the mangoes and slice in two removing the seeds. 


2. Arrange the mango halves in a deep oven-proof casserole, hollow sides up,  together with the sugar and vanilla pods. 


3. Pour the wine over the mangoes and bake for 30-40 minutes.


4. Remove from the oven,  allow to cool then chill well before serving.
