Baked Pear and Blackberry Crème

Serves 4-6 Hot Vegetarian
Fruit Dessert Pudding Gluten Wheat Free
4 Pears, peeled, cored and sliced
4 Egg Yolks
50g/2oz Caster Sugar
The grated zest of 1 Lemon
210ml/7fl.oz. Crème Frâiche
1. Preheat the oven to 220C, 425F, Gas Mark 7 and place the fruit in a shallow
heatproof gratin dish.
2. In a mixing bowl, beat together the egg yolks and sugar until light and
creamy then add the lemon zest and crème fraîche and mix well.
3. Pour the creamy mixture evenly over the fruit, place on a baking tray and
bake for 15-20 minutes until golden brown. Serve hot.
