5 large Bananas, peeled
1/2 Vanilla Bean, sliced open lengthways
100g/4oz Manioc (Cassava) Starch
1. Preheat the oven to 150C, 300F, Gas Mark 2 and lightly butter a shallow
ovenproof dish. Cut the bananas into large slices, place them in a large
saucepan together with the vanilla bean.
2. Cover with
water, bring to the boil and cook for 15 minutes.
3. Remove and
reserve the vanilla bean, drain the fruit, then transfer to a food processor and
process until puréed.
4. Transfer to a
large mixing bowl, add the manioc starch and scrape the vanilla seeds into the
mixture. Mix well until smooth and creamy.
5. Transfer to the
prepared dish and bake for 30 minutes.
6. To serve -
remove from oven , cut into small pieces, sprinkle with sugar and serve with the
coconut milk or cream and extra sugar.
