4-6 Hot Vegetarian Dessert Pudding
2 Egg yolks
15g/ ½ oz Plain
A pinch of Salt
½ teasp Vanilla Essence
2 Egg Whites, stiffly beaten
1. Preheat the
oven to 180C, 350F, Gas Mark 4. In a large mixing bowl, cream together the
butter and sugar until pale and fluffy.
2. Beat egg yolks
one at a time, into butter mixture.
3. Add the flour,
salt and milks alternately to the batter, mixing well between each addition then
add the vanilla essence.
4. Fold in the
stiffly beaten whites then transfer the mixture to a deep ovenproof dish and
bake for 1 hour. Serve with a fruit sauce such as strawberry.
