Cherry Fritters Veg HT DP Hungarian 20mins plus resting Hungarian Name: Cseresznyek Rumos Palacsintaban
Serves 4 Hot Fruit Alcohol Vegetarian Dessert Pudding eggless Hungary Eastern Europe
Ingredients 2 Eggs 50g/2oz Plain
Flour A pinch of Salt 100g/4oz Clarified Butter 120ml/4oz Vegetable Oil 450g/1lb Fresh Cherries with the stems in tact Extra Icing Sugar Vanilla Sugar to serve
Instructions
1. Place the eggs, flour, 1 tablespoon of the icing sugar, salt and rum in a large mixing bowl and beat until smooth. Set aside to rest for 1 hour.
2. Heat the butter and oil in a frying pan until hot.
3. Dip the cherries into the batter and stand them up in the frying pan containing the hot butter and oil. Reduce the heat to medium and continue to cook the cherries, Turning them carefully by their stems to make sure they crisp on all sides. Cook until golden brown on all sides.
4. Transfer the cooked cherries to kitchen paper which has been sprinkled with icing sugar.
5. To serve
- pile the fritters into a pyramid shape and sprinkle with the vanilla sugar.
Serve hot.
