1. Place the eggs, flour, 1
tablespoon of the icing sugar, salt and rum in a large mixing bowl and beat
until smooth. Set aside to rest for 1
2. Heat the butter and oil in a frying
pan until hot.
3. Dip the cherries into the batter and stand them up in the
frying pan containing the hot butter
and oil. Reduce the heat to medium and continue to cook the cherries, Turning them carefully by their stems to make sure they crisp
on all sides. Cook until golden brown on all sides.
the cooked cherries to kitchen paper which has been sprinkled with icing sugar.
5. To serve
- pile the fritters into a pyramid shape and sprinkle with the vanilla sugar.
