Coconut Amaretto Pie Veg CD DP 45mins plus cooling
Makes 1 x 22cm/9 inch Cold Alcohol Vegetarian Dessert Pudding
Ingredients 50g/2oz Butter, softened 225g/8oz Caster Sugar 2 Eggs, beaten 180ml/6fl.oz. Milk 60ml/2fl.oz. Amaretto 25g/1oz Self Raising Flour 50g/2oz Desiccated (flaked) Coconut
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly grease a 22cm/9 inch pie plate.
2. In a large mixing bowl, beat together the butter and sugar until light and fluffy.
3. Add eggs and beat well then add the milk, amaretto, and flour, beating well to blend thoroughly.
4. Stir in the coconut, mix well then pour the mixture into the pie plate. Bake for 35 minutes or until set. Cool completely before serving.
