Coconut Custard

Ingredients 240ml/8fl.oz Thick
Coconut Milk 1 teasp Rosewater 225g/8oz Sugar A pinch of Salt 3 Eggs, lightly beaten
Instructions 1. Place the coconut milk, sugar, rosewater and salt in a medium saucepan and cook over
a low heat, stirring, until the sugar dissolves and it just starts to simmer. 2. Add the eggs, stirring constantly, and continue to
cook over a very low heat until it thickens.
3. Transfer the mixture to a heatproof bowl and steam
for 30 minutes, or until set.
