Date and Cream Cheese Dessert Veg CD DP 25mins plus chilling
Serves 4 Cold Vegetarian Fruit Alcohol Dessert Gluten Wheat Free Eggless
Ingredients 175g/6oz Dates, pitted 4 tbsp Drambuie (check manufacture) 350g/12oz Cream Cheese 4 tbsp Single Cream 3 tbsp Caster Sugar
Instructions
1. Reserve 4 dates for decoration and chop the remainder.
2. Place the chopped dates in a saucepan together with the the Drambuie and cook gently over a low heat, stirring, until the dates become soft and mushy. Remove from the heat and set aside to cool.
3. In a large mixing bowl, beat the cream cheese, cream and sugar together until well blended and fluffy.
4. Add the cooled dates to the cream cheese mixture and mix well.
5. Spoon the mixture into individual serving glasses, decorate with the reserved whole dates and chill for 30 minutes before serving.
