Flemish Cheesecake Veg HT CD DP Belgian 115mins plus proving
Belgian Name: Plattekaastarte
Flemish Yeast Dough (click for recipe) 5 tbsp Apple Puree 50g/2oz Ground Almonds 225g/8oz Cottage Cheese 200g/7oz Caster Sugar 1 teasp Vanilla
Extract
1. Preheat the oven to 180C, 350F, Gas Mark 4 and roll the dough out and use to line a buttered 22cm/9-inch springform tin.
2. Place the apple puree in the pastry case and spread evenly over the bottom. Set aside.
4. In a large mixing bowl, beat together the egg yolks and cottage cheese until well blended.
5. Add the crushed macaroons, sugar, almonds and vanilla sugar and mix well.
6. Fold in the egg whites then spread mixture over apple puree in the pie crust. Bake for 50-60 minutes until golden. Serve hot or cold.
