2 Hot Vegetarian Fruit Dessert
Pudding Sweet Pancake

150g/+5oz raspberries, fresh or frozen
2 kiwi fruit, peeled and sliced
Zest and juice of 1 orange
1 teasp of icing sugar
1. Place the raspberries and orange zest and juice in a food processor process
until smooth. Pass the puree through a fine sieve, discard the seeds and sweeten
with a little icing sugar.
2. Mix the kiwi fruit and blueberries. Lay one pancakes on a plate, spoon half
the fruit mixture over half then fold the other half over. Repeat the process
with a second pancake.
3. Transfer to serving plate and pour over a little sauce.
