Kiwifruit Syllabub Veg CD DP 10mins plus chilling
Serves 4 Cold Vegetarian Kiwi Fruit Alcohol Dessert Gluten Wheat free Eggless
Ingredients 5 Yellow Kiwifruit 50g/2oz Castor Sugar The juice of 1 Lemon 120ml/4fl.oz. Champagne or Sparkling Wine 300ml/10fl.oz. Double Cream Sprigs of Mint to decorate
Instructions
1. Peel and roughly chop 4 of the kiwifruit, place in a food processor together with the sugar and process until smooth.
2. Transfer to a mixing bowl together with the lemon juice and Champagne or cider. Mix well.
3. In another bowl, whisk the double cream until thick then add it into the kiwifruit mixture and fold in until well blended.
4. Divide the mixture between four tall glasses and chill until ready to serve.
5. To serve - remove from refrigerator 5 minutes before serving and top each with a thin slice of the remaining kiwifruit and decorate with a sprig of mint.
