Kumquat & Lychee Cup Veg CD DP 25mins plus chilling Serves 4 Cold Vegan Vegetarian Fruit Alcohol Dessert Pudding Dairy Gluten Wheat Free Eggless Ingredients: 400g/14oz tinned Lychees 275g/10oz Fresh Kumquats 75g/3oz Sugar 240ml/8fl.oz. Water 225g/8oz Fresh Raspberries 2 Bananas Juice of 1 Orange 3 tbsp KirschInstructions 1. Place the sugar in a saucepan together with the water, bring to the boil and cook for 15 minutes. Add the kumquats, bring to the boil and simmer for 10 minutes. Remove the kumquats with a slotted spoon, reserving 120ml/4fl.oz of the syrup, and allow both the fruit and syrup to cool. 2. In a bowl, mix together the orange juice, reserved syrup and kirsch. 3. Peel and slice the banana then add to the bowl containing the orange mixture together with the rest of the fruit. Mix carefully then chill before serving.
