Minted Nectarine Sorbet
Veg CD DP 15mins plus freezing
Serves 4-6 Cold Fruit Vegetarian Dessert Ices Gluten Wheat Dairy

Ingredients
6 Very ripe Nectarines
180ml/6fl.oz.Apple Juice
1/4 teasp Mint Extract
180ml/6fl.oz Runny Honey
Instructions
1. Remove the stones from the nectarines and roughly chop the flesh.
2. Place the nectarine flesh in a blender or food processor, together with a
third of the apple juice and mint extract and process to a puree.
3. In large mixing bowl, mix together the remaining apple juice with the honey
then stir in the fruit puree, blending thoroughly.
4. Transfer to an ice cream maker and churn freeze for 20 minutes or according
to the manufacturer’s instructions. Alternatively, turn the mixture into a rigid
freezer-proof container and freeze, removing from the freezer every 20 minutes
or so and beating well with a wooden spoon to break up any ice particles.
