Blackcurrants, washed topped and tailed

Preheat the oven to 220C, 425F, Gas Mark 7.
Place the fruit in a large shallow ovenproof dish. Set aside.
In a mixing bowl, beat the egg yolks with the sugar until light and creamy.
Add the orange zest and crème fraîche and mix well then pour this mixture over
