A Weekday Menu Recipe

Serves 4 Cold Vegetarian
Fruit Spices Dessert Pudding Gluten Wheat free Eggless
2 Very Ripe Papayas, peeled, seeded and chopped
2 tbsp Caster Sugar
1 teasp Ground Ginger
½ teasp Vanilla Extract
450g/1lb Greek Yoghurt
150ml/5fl.oz. Double Cream, whipped
1. Place the papaya flesh sugar, ground ginger and vanilla extract in a
food processor and process to a puree.
2. Transfer the mixture to a large mixing bowl, add the yoghurt and mix well.
3. Gently fold in the whipped cream and blend thoroughly then transfer to
individual serving dishes. Refrigerate until ready to serve.
