4-6 Hot Vegetarian Fruit Dessert Pudding
6 Firm Ripe Pears,
peeled cored and sliced
2 tbsp Butter
The grated rind and juice of 1 Lemon
75g/3oz Brown Sugar
400g/14oz Ginger nut Biscuits
240ml/8fl.oz. Whipping Cream
3 tbsp Brown Sugar
2 tbsp Butter
1. Preheat the
oven to 180C, 350F, Gas Mark 4 and lightly grease a 2L/80fl.oz. baking dish.
2. Heat the butter
and sugar in a large frying pan, add the pears and sauté until golden brown and
coated with butter mixture.
3. Add the lemon
juice and rind and mix well. Remove from the heat and set aside.
4. Break up the
biscuits into bite-sized pieces and arrange half of the mixture in the prepared

of pear mixture then pour half of the cream over the top. Repeat with the
remaining biscuits, pears and cream.
6. For the
topping, sprinkle with the sugar and dot with butter. Bake for 35 to 40 minutes
mixture is bubbling and the pears are soft. Serve hot.
