Pear and Ginger Pudding Veg HT DP 60mins
Serves 4-6 Hot Vegetarian Fruit Dessert Pudding
Ingredients For the pudding 6 Firm Ripe Pears,
peeled cored and sliced For the Topping 3 tbsp Brown Sugar Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly grease a 2L/80fl.oz. baking dish.
2. Heat the butter and sugar in a large frying pan, add the pears and sauté until golden brown and coated with butter mixture.
3. Add the lemon juice and rind and mix well. Remove from the heat and set aside.
4. Break up the biscuits into bite-sized pieces and arrange half of the mixture in the prepared dish.
5. Cover with half of pear mixture then pour half of the cream over the top. Repeat with the remaining biscuits, pears and cream.
6. For the topping, sprinkle with the sugar and dot with butter. Bake for 35 to 40 minutes mixture is bubbling and the pears are soft. Serve hot.
