Raspberry Vacherin Veg CD DP 120mins plus cooling
Serves 6 Cold Fruit Alcohol Vegetarian Dessert Pudding Gluten Wheat free
Ingredients 3 Egg Whites, separated 175g/6oz Cream Cheese 175g/6oz Caster Sugar 2 tbsp Maple Syrup 2 tbsp Grand Marnier 225g/8oz Fresh Raspberries 120ml/4fl.oz. Fromage Frais 25g/1oz Icing Sugar
Instructions
1. Preheat the oven to 140C, 275F, Gas Mark 1 and line 2 baking sheets with the greaseproof or parchment paper.
2. In a large mixing bowl, whisk the egg whites until very stiff. Whisk in the sugar then divide the mixture between the 2 baking sheets forming 1 circle about 20cm/8 inches in diameter on each tray. Bake for 1½ to 2 hours until crisp. Cool on wire trays.
3. In a mixing bowl, mix together the cream cheese, honey and Grand Marnier then fold in the fromage frais and raspberries.
4. To serve - Place one meringue circle on a large serving plate. Pile the cream cheese mixture on the top then place the second meringue circle on top. Dust with icing sugar and serve immediately.
