Red Grapefruit Granita Veg  CD  DP  45mins plus freezing

 

 

Serves 4-6    Cold  Vegetarian  Vegan Fruit  Alcohol Dessert  Ices  Gluten Wheat Dairy  free  Eggless

 

 

Ingredients

350ml/12fl.oz. Water

200g/7oz Caster Sugar

6 Juniper Berries, lightly crushed

2 Red Grapefruit, segmented and de-seeded

250ml/9fl.oz. fresh Red Grapefruit Juice

1½ tbsp Gin

 

 

Instructions

 

 

1. Place 150ml/5fl oz of the water, 50g/2oz of sugar and the juniper berries in a small saucepan, bring to the boil then remove from the heat and set aside for 30 minutes.

 

2. Meanwhile, in another small saucepan pan, bring the remaining water and sugar to the boil and continue to coil for 5 minutes, stirring one or twice to form a syrup.

 

3. Place the grapefruit segments in the hot sugar syrup, allow to cool at room temperature then transfer to the refrigerator to chill.

 

4. Place the grapefruit juice in a large bowl then strain the sugar, water and juniper berries through a fine sieve into the grapefruit juice.

 

5. Add the gin, mix well, then transfer the mixture into a wide and shallow container and place in the freezer for about 1 hour, or until the granita starts to freeze and form crystals. 

 

6. Scrape the sides of the container and mix gently to combine.

 

7. To serve -  place a few of the marinated grapefruit segments in individual serving glasses, divide the granita between  the glasses and top with a few more segments. Pour a little of the sugar syrup used to marinate the grapefruit over the fruit and granita and serve immediately.
