450g/1lb Jasmine Rice
420ml/14fl.oz. Coconut Milk
½ teasp Salt
2 tbsp Vanilla Extract (check ingredients)
2 tbsp Toasted Sesame Seeds
1. Place the rice and water in a saucepan, bring to the
boil then reduce the heat, cover and cook very gently for about 15 minutes or
until the rice is just cooked.

it thickens, stirring frequently.
3. Fluff the rice with a fork to separate, add to the
sauce and mix well, then spread the mixture into a shallow dish and sprinkle the
sesame seeds on top, pressing them down with a wooden spoon.
with clingfilm and leave to set for few hours.
5. To serve - cut in to squares.
