Sesame Sticky Rice

Asia Ingredients 450g/1lb Jasmine Rice
240ml/8fl.oz. Water
420ml/14fl.oz. Coconut Milk 225g/8oz Sugar ½ teasp Salt 2 tbsp Vanilla Extract (check ingredients) 2 tbsp Toasted Sesame Seeds Instructions 1. Place the rice and water in a saucepan, bring to the
boil then reduce the heat, cover and cook very gently for about 15 minutes or
until the rice is just cooked. 2. Meanwhile,
place the coconut milk, sugar, salt
and vanilla extract in a large saucepan and cook over a medium/high heat until
it thickens, stirring frequently. 3. Fluff the rice with a fork to separate, add to the
sauce and mix well, then spread the mixture into a shallow dish and sprinkle the
sesame seeds on top, pressing them down with a wooden spoon. 4. Cover
with clingfilm and leave to set for few hours. 5. To serve - cut in to squares.
