Stilton Ice Cream Veg CD DP English 15mins plus freezing
Serves 4 Cold Vegetarian Dessert Pudding England British Europe
Ingredients 50g/2oz Stilton cheese, rind removed 3 Egg Yolks 50g/2oz Icing Sugar (powdered sugar) 300ml/10fl.oz. Whipping Cream 3 Egg Whites
Instructions
1. Finely crumble the cheese into a large mixing bowl and beat together with the sugar and egg yolks until well blended.
2. In another bowl, whisk the cream until it thickens then add the whipped cream to the cheese mixture.
3. In a clean bowl, whisk the the egg whites until firm then gently fold into the cheese mixture. 4. Transfer the mixture to a rigid freezer-proof box, cover with a lid and freeze for a few hours until firm.
