A Weekday Menu Recipe

Swaddled Watermelon Peaches    Veg  CD  DP  15mins

Serves 4 6     Cold Vegetarian Fruit Spices Nuts Dessert Gluten Wheat free Eggless

a Small Watermelon, cubed
2 Peaches, cubed
The Juice of 1 Large Grapefruit
2 tbsp Caster Sugar
teasp Ground Mixed spice
300ml/10fl.oz. Greek Yogurt
4 tbsp Flaked Almonds, toasted


1. Place the watermelon, peaches and grapefruit juice in a large serving bowl and toss together.

2. In another mixing bowl, mix together the sugar, mixed spice and yogurt until well blended then pour over the watermelon mixture.

3. Just before serving, sprinkle the almonds over the top. Serve immediately.
