Walnut Plum Crumble Recipe

675g/1˝lb Ripe Plums, stoned and quartered
1 tbsp Demerara
The Juice and
grated zest of 1 Orange
For the Crumble
125g/5oz Plain Flour
50g/2oz Walnuts, chopped
1. Pre-heat oven to 200C, 400F, Gas Mark 6. Place the plums, water,
orange juice and zest in a saucepan, bring to the boil then reduce the heat and
simmer, uncovered, for 10 minutes.
2. Meanwhile, in a
large mixing bowl, rub the butter into flour with your fingertips until
the mixture resembles fine breadcrumbs.
3. Stir in sugar
and walnuts, mixing well.
4. At the end of
the cooking time, transfer the plums to a shallow ovenproof dish and sprinkle
the crumble mixture evenly over the top. Bake for 25 minutes until golden.
Serve hot with custard.
