Serves 4   Desserts  Puddings    Hot     Vegetarian



1 egg

100f/4oz Plain Flour

150ml/5 fl.oz Beer

75g/3oz Caster Sugar

A pinch of Salt

A pinch of Ground Allspice

Oil for deep frying

4 Large Dessert Apples

Caster Sugar

Ground Cinnamon




1. Separate the egg. Put the yolk, sugar, flour, beer, salt and allspice in a bowl and whisk to a smooth batter.


2. Whisk the egg white until stiff then fold into the batter.


3. Heat the oil for deep frying to 180C, 350F.


4. Peel and core the apples and cut into 6mm, 1/4 inch rings. Dry on kitchen paper then dip into the batter and deep fry for 4-5 minutes, turning once. Drain on kitchen paper.


5. Dredge in sugar and cinnamon and serve hot.
