2 tbsp Cold
1 Egg Yolk
1 tbsp Milk
1. Preheat the
oven to 220C, 425F, Gas mark 7,
2. Peel, core
and slice the apples. Put into a saucepan with the butter, sugar and
water and cook, uncovered for 15 minutes until the
apples are very soft and the water has been
absorbed. Leave to cool.
3. On a
floured board, roll out the pastry to 5mm/1/4 inch thickness. Cut into quarters.
4. Divide the
apple puree between the four squares and sprinkle with cinnamon. Brush
the edges of each 'puff turnover' with a mixture of beaten egg and milk then fold over
diagonally to form triangles.
5. Use the
back of a knife to knock up the edges then press them firmly together using
a fork - this will also create a decorative pattern.
6. Brush with
the remaining egg yolk and milk mixture. Place on a lightly
tray and bake for 15-20 minutes.
