Baked Pears in Coffee Veg CD DP 30mins plus chilling

Ingredients 4 Ripe Pears, peeled, halved and core removed 270ml/9fl.oz. Very Strong Fresh Black Coffee 100g/4oz Sugar 270ml/9fl.oz. Double Cream, whipped 1 tbsp Chopped Walnuts
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4.
2. Arrange the pears, cut sides down, in a shallow ovenproof dish.
3. Place the coffee and sugar in a saucepan and bring to the boil then pour over the pears. Cover with aluminium foil and bake in the oven for 10 minutes or until the pears are tender.
4. Using a slotted spoon, transfer the pears to a serving dish and set aside to cool.
5. Place the coffee liquid in a saucepan, bring to the boil and continue to boil until reduced by one third. It should be thick enough to coat the back of a spoon.
6. Pour the reduced liquid over the pears, cool and refrigerate until well
chilled.
7. To serve - spoon the coffee liquid over the pears again to re-glaze, decorate with the whipped cream and sprinkle the chopped walnuts over the top. Serve well chilled.
