fl.oz. Double Cream
1 1/2 fl.oz. Milk
tbsp Lemon Juice
tbsp Grand Marnier
Large Banana for decoration
Sprigs of Mint for decoration
Put 25g/1oz of the caster sugar and the egg yolks in a bowl over a pan of hot water
and whisk until thick. Remove from the heat and set aside to cool.
Peel 2 of the the bananas, place in a bowl, add the lemon juice and mash. Stir
in the remaining caster sugar and the Grand Marnier, mix well then add to the
egg yolk mixture.
In a separate bowl, whip the cream, gradually adding the milk, until thick. Fold into the banana mixture.
Spoon into individual dishes, cover with clingfilm and chill for at least 2 hours.
To serve - decorate with a sprig of mint and slices of banana which have been dipped
in lemon juice to prevent discolouration.
