Banana Cream Veg CD DP 15mins plus chilling Serves 4 Cold Vegetarian Fruit Alcohol Desserts puddings Gluten Wheat Free
Ingredients 150ml/5 fl.oz. Double Cream 45ml/ 1 1/2 fl.oz. Milk 50g/2oz Caster Sugar 1 Egg Yolk 3 Bananas 2 tbsp Lemon Juice 2 tbsp Grand Marnier 1 Large Banana for decoration 4 Sprigs of Mint for decoration
Instructions
1. Put 25g/1oz of the caster sugar and the egg yolks in a bowl over a pan of hot water and whisk until thick. Remove from the heat and set aside to cool.
2. Peel 2 of the the bananas, place in a bowl, add the lemon juice and mash. Stir in the remaining caster sugar and the Grand Marnier, mix well then add to the egg yolk mixture.
3. In a separate bowl, whip the cream, gradually adding the milk, until thick. Fold into the banana mixture.
4. Spoon into individual dishes, cover with clingfilm and chill for at least 2 hours.
5. To serve - decorate with a sprig of mint and slices of banana which have been dipped in lemon juice to prevent discolouration.
