Blackberry and Apple Dumplings Veg HT British 75mins Serves 4 Hot Fruit Vegetarian Dessert Pudding Britain Europe Eggless
Ingredients: 350g/12oz Shortcrust Pastry 4 Large Cooking Apples 20 Blackberries 4 teasp Brown Sugar
Instructions
1. Preheat the oven to 220C, 425F, Gas mark 7. On a floured board, roll the pastry out to 5mm/ 1/4 inch. Cut into four squares.
2. Peel and core the apples and place one apple on each pastry square. Pack the centre of each apple with a few blackberries and some of the brown sugar.
3. Brush the edges of the pastry with water then gather up the four corners pressing firmly together at the top of each apple. Press together the sides to form an 'envelope'.
4. Place the apples on a baking tray and bake for 15 minutes. Reduce the temperature to 180C, 350F, gas mark 4 and continue to cook for a further 40 minutes. Serve hot.
