Carrageen Peppermint Cream Veg  CD DP  Irish 40mins plus chilling


Serves 6   Cold  Vegetarian  Dessert Pudding  Eggless  Ireland British  Europe



A Handful of Carrageen Moss

900ml/30fl.oz. Milk

A pinch of Salt

2 tbsp Sugar

6 drops Peppermint Oil

Green Food Colouring

Whipped Cream and Chocolate sauce to serve




1. Soak the Carrageen moss in cold water for 15 minutes until soft. Rinse well and drain.


2. Place the milk, moss  and salt in a large saucepan. Bring to the boil and cook until the liquid is thick and creamy.


3. Add sugar, peppermint oil and green food colouring and blend well.


4. Strain Into a serving dish through a sieve to remove the carrageen (this can be discarded).  Leave to set.


5. Serve with whipped cream and chocolate sauce.


Carrageen moss is an edible seaweed that is found all along the coast of the West of Ireland.
