tbsp Double Cream
tbsp Icing Sugar
Dip the peaches in boiling water then skin, halve and stone them. Put 8 peach halves
in a bowl and sprinkle with 1 tbsp brandy. Leave for 1 hour.
Meanwhile, blend the remaining 2 peach halves with the cheese or process in a
food processor. Add the remaining brandy, cream and icing sugar. Blend until smooth.
Chill until ready to serve.
Put 2 peach halves for each portion in individual glasses and top with brandied
