Figs with Raspberry Cream Veg CD DP 15mins plus chilling Serve 4 Cold Vegetarian Fruit Dessert Gluten Wheat Free EgglessIngredients 450g/1 lb Fresh Figs 1 tbsp Lemon Juice 225g/8oz Raspberries 100g/4oz Caster Sugar 150ml/5 fl.oz Whipping CreamInstructions 1. Peel and halve the figs and place in a serving bowl. Sprinkle with lemon juice and refrigerate. 2. Wash the raspberries and press through a sieve into a bowl containing the sugar. Mix well. 3. In another bowl, whisk the cream to the soft peak stage then fold in the raspberry purée. 4. Spread the raspberry cream on top of the figs and chill for at least 1 hour before serving.
