French Baked Apples    Veg   HT  DP   French    60mins

Serve 4     Hot  Vegetarian  Dried Fruit  Grains Dessert Pudding  Gluten Wheat free Eggless 



450ml/15 fl.oz. Milk

200g/7oz Pudding Rice

2 tbsp Granulated Sugar

A pinch of Salt

150g/5oz Dried Mixed Fruit


4 Large Apples

50g/2oz Butter

4 tbsp Caster Sugar

8 tbsp Raspberry Jam




1. Preheat the oven to 375F, 190C, Gas mark 5.


2. Boil the milk in a saucepan. Add the rice, granulated sugar and salt then cover and cook for 30 minutes.


3. Meanwhile, in another saucepan, just cover the dried fruit with water, cover with a lid and cook for 25 minutes.


4. Wash, dry and core the apples. If necessary, cut a thin slice off the base so the apples don't fall over when placed upright. Place on a greased baking tray, add a knob of butter to each and sprinkle with 1 tbsp sugar. Bake for 25 minutes.


5. Meanwhile, heat the raspberry jam then pass through a sieve to remove the pips. Keep warm.


6. To serve - Mix the rice and dried fruit mixtures together. Divide between 4 dishes and place the apples on top. Pour over the raspberry syrup.
