Fruit Dumplings Veg HT DP 45mins
Serve 4 Hot Vegetarian Fruit Dessert Pudding Eggless
Ingredients: 100g/4oz Self Raising Flour 25g/1oz Butter 75g/3oz Sugar A little Water 450g/1lb Fruit e.g. apples, plums, pears, firm peaches Extra sugar to serve
Instructions
1. In a bowl, rub the butter into the flour with your fingertips until it resembles fine breadcrumbs. Stir in the sugar and add enough water to form a soft dough. Make into dumplings about the size of a golf ball.
2. Prepare fruit by washing, peeling if necessary, removing any stones or core and cutting into large pieces as necessary. Place the fruit and sugar in a large saucepan with 450ml/15 fl.oz. Water. Bring to the boil then carefully drop the dumplings into the boiling liquid. Cook steadily for 20 minutes.
3. To serve - transfer to a warmed serving dish, sprinkle with sugar and serve hot.
