Hot Vegetarian Alcohol Dessert Pudding

1. Mix the
flour, sugar and salt in a bowl then gradually beat in the milk and
eggs. Whisk until smooth then add the melted butter,
cider, the grated rind of one of the oranges
and a few drops of vanilla essence.
2. Rub the
sugar lumps over the skin of the other two oranges to absorb the zest then
crush them into a small bowl.
3. Peel the
oranges, making sure there is no white pith remaining, chop roughly and
put in a large bowl together with the apple. Mix well.
4. Preheat the
grill. Pour 1 tbsp of oil into a frying pan. Heat tilting the pan to coat
the base and sides thoroughly. When hot, add one sixth of the batter and cook
for 1-2 minutes until set.
5. Spoon over
a sixth of the fruit mix and sprinkle with a sixth of the sugar being careful
not to allow it to go onto the sides of the pan.
6. Place under
the hot grill for a few minutes until bubbling. Fold over and remove
to a serving dish. Cover and keep warm while you make the other four pancakes
in the same way. Serve hot.
