Fruit Pudding with Rice Veg HT DP 75mins Serve 4 Hot Vegetarian Nuts Grains Dessert Pudding Gluten Wheat free
Ingredients: 360ml/12 fl.oz Milk 4 strips of Lemon Rind 75g/3oz Pudding Rice 350g/12oz Apples 1 Banana 50g/2oz Sugar 1 teasp Ground Cinnamon 50g/2oz Sweet Cocktail Cherries 25g/1oz Chopped Walnuts 2 Eggs
Instructions
1. Put the milk, lemon rind and milk in a saucepan. Bring to the boil then simmer for 40 minutes, stirring occasionally.
2. Preheat the oven to 180C, 350F, Gas mark 4.
3. Meanwhile, peel and slice the apples and bananas.
4. Heat the butter and 50g/2oz of the sugar in a pan, add the apples and cook for 5 minutes. Add the bananas to the pan and cook for a further 3 minutes. Sprinkle with cinnamon then stir in the drained cherries and walnuts.
5. Remove from heat and quickly put the mixture into a greased ovenproof dish.
6. Separate the eggs then cream together the yolks and 25g/1oz of sugar in a bowl. In another bowl, whisk the egg whites with the remaining sugar until stiff.
7. Fold both mixtures into the cooked rice, having removed the lemon peel and pour over the fruit.
