tbsp Caster Sugar
Preheat the oven to 200C, 400F, Gas mark 6. Roll out the pastry and line a
20.5cm/8inch greased flan tin. Line this with greaseproof paper and fill with
baking beans. Bake for 15 minutes.
Halve and stone the greengages and arrange in the half-baked flan case.
In a bowl, beat together the eggs, cream and sugar and pour over the greengages.
Bake for 30-40 minutes until golden and puffed. Serve warm.
