Greengage Tart Veg HT DP 70mins Serves 4 Hot Vegetarian Fruit Dessert Puddings
Ingredients: 225g/8oz Shortcrust Pastry 450g/1lb Greengages 2 Eggs 300ml/10 fl.oz. Single Cream 1 tbsp Caster Sugar
Instructions 1. Preheat the oven to 200C, 400F, Gas mark 6. Roll out the pastry and line a 20.5cm/8inch greased flan tin. Line this with greaseproof paper and fill with baking beans. Bake for 15 minutes.
2. Halve and stone the greengages and arrange in the half-baked flan case.
3. In a bowl, beat together the eggs, cream and sugar and pour over the greengages. Bake for 30-40 minutes until golden and puffed. Serve warm.
