Gypsy Tart      CD  DP  English  30mins plus cooling



Serves   6    Cold  Traditional Flan  Dessert Puddings  England  British  Europe



   1 x 25cm/10 inch pre-baked Sweet Pastry Case

   1 x 400g/14oz Tin Evaporated Milk, WELL CHILLED

   325G/12oz Soft Brown Sugar




1. Preheat the  oven to 200C, 400F, Gas Mark 6.


2. In a mixing bowl, whisk together the chilled evaporated milk and sugar until light and fluffy and toffee coloured. This will probably take about 10 minutes with an electric whisk.


3. Transfer the mixture to the pasty case and bake in the oven for 10 minutes.


4. Allow to cool and set before serving.
